Heart Shaped Brownies

Elliot works with Mr Carinae. Elliot made me happy. To show my appreciation, I decided to bake. My baking is better than my cooking.

I ate a cookie when I was in Carson City, Nevada, 2 weekends ago. I thought it was a plain old chocolate chip. Au contraire, mon frère! This cookie startled me – it was stuffed with a freakin’ brownie! Or was it a chocolate cookie? At any rate, I was bound and determined to replicate it.

I used my Chocolate Chip Cookies recipe, but this time I used mini chocolate chips instead of regular sized ones.

I made brownies, let them cool and then used a cute little 1 inch diameter heart shaped cookie cutter. Pretty little heart shaped brownies!

Carinae’s Cake

I know I’ve been remiss in posting nail polish stuff of the day, but I’ve spent the week baking. I know you’re thinking I’m nuts for baking in such pretty weather, but I couldn’t help it!

I really felt the need to bake – I’ve been feeling off kilter for a few days and I thought if I got my bake on I’d improve. Mercifully baking wasn’t off, but the rest of me was. If I had messed up on baking things, I’d have cried. I made blueberry scones on Tuesday and then I made up a cake that’s been cooking in my head. It’s been dying to get out and when I pulled it all together, it was pretty darn tasty if I do say so myself.

Minty Chocolate Cookies

Move over Girl Scouts! My stuff is better – it’s mintier and fresher. Take that, girls in green! Seriously, it’s March and in March I used to call it Girl Scout season. However, in the past few years after having purchased my old favorite stand-bys from the GS, I was always pissed off and annoyed at the more waxy taste than the mint flavoring I loved, craved and adored while growing up. So while mine do not look traditionally like the Girl Scout Thin Mints, I think mine kicks it to the curb.

My friend who does Weight Watchers gave me some news about these cookies – they’re worth 2 points each. She was happy because these give her her sweet tooth craving and the shot of mint she loves. She’s notoriously cray cray in March for the mint shakes. I used to think she was nuts until I had a mint shake from a fast food restaurant that I shall not name (McDonald’s) years ago. Now I think it best for me to stay far, far away because if I let myself that would be breakfast, lunch and dinner for me. I’d probably have to throw in a large fries with that. So it’s best that I pretend they’ve discontinued those Shamrock Shakes and go on about my merry way.

However, there is something about March – I’ll give her that…and in this particular instance of March, I was craving some GS Thin Mints something fierce. I finally bit the bullet and said I was going to tweak some recipes to get that Thin Mint action going on.

My supa secret ingredient to bring the mint on? Andes Mints. Yea, baby. I’ve never been a fan of those thin mints, but they work here. I think you will have to agree with me on this.

Jealous much? I made these cookies for Mr Carinae’s office on Friday and they’re called Peanut Butter Sin. It’s all peanut butter with some chocolate thrown in for good measure.

I miss home

Ok, livejournal told me a few moments ago my post was too big – wtf?

Anyway, I had presence of mind to actually copy and paste into word – go go me for having some minute foresight.

That said…on with the old post (and if LJ says it’s too big, FU – I’ll move over to wordpress/blogspot somewhere where you don’t limit me~

Actually, I miss baking – haha. Oven is still on the fritz, even though our landlord (when she came to visit) said she would be sending someone over. So in a spirit/them of I miss home, this is what I miss baking…and I thought I’d share the recipe with you.

I miss my mom’s Leche Flan. I know a lot of people don’t like custard, but I do. I have dreams about what I’d do if I could bake here…maybe it’s a good thing. I have been eating well and have been bemoaning the fact that I have gained weight stating I’ll be the first and only person to come back from India having gained weight from a vegetarian diet! Haha.

Leche Flan – mommy style~

Ingredients:

 

12 egg yolks

1 can condensed milk

1 pint Vit D milk

1 tablespoon vanilla

Directions:

Blend all ingredients in a blender. Pour mixture into a loaf tin lined with caramelized sugar (see below). Cover with aluminum foil. Place tin in a larger baking pan half-filled with water. Place pan in pre-heated oven (375 F) and bake flan for about 1 hour or until it is firm.

 

Caramel Sauce

 

Ingredients:

 

1 cup sugar

1 cup water


Directions (to make caramel sauce):

Put sugar and water in a saucepan. Caramelize in high heat. Line loaf tin with caramelized sugar. Be sure to line the sides of the pan.

I’ve been wanting some lumpia for a while and have pondered making my own, but finding the wrappers here have been difficult. I don’t want eggroll wrappers because that stuff is mega thick and lumpia wrappers are delicate.

I went on the hunt and found something I can work with and thought I’d share it with you. It’s trial and error and don’t expect to get it right the first time.

Lumpia wrapper

Ingredients:

1 cup flour
1 egg
1 cup water

Directions:

1 Mix all ingredients until very smooth.
2 Lightly grease a non-stick pan and heat. Brush mixture onto pan. When dough starts to come away from the pan, lift wrapper out carefully. It will not lift out if mixture is not done.
