I miss home

Ok, livejournal told me a few moments ago my post was too big – wtf?

Anyway, I had presence of mind to actually copy and paste into word – go go me for having some minute foresight.

That said…on with the old post (and if LJ says it’s too big, FU – I’ll move over to wordpress/blogspot somewhere where you don’t limit me~

Actually, I miss baking – haha. Oven is still on the fritz, even though our landlord (when she came to visit) said she would be sending someone over. So in a spirit/them of I miss home, this is what I miss baking…and I thought I’d share the recipe with you.

I miss my mom’s Leche Flan. I know a lot of people don’t like custard, but I do. I have dreams about what I’d do if I could bake here…maybe it’s a good thing. I have been eating well and have been bemoaning the fact that I have gained weight stating I’ll be the first and only person to come back from India having gained weight from a vegetarian diet! Haha.

Leche Flan – mommy style~

Ingredients:

 

12 egg yolks

1 can condensed milk

1 pint Vit D milk

1 tablespoon vanilla

Directions:

Blend all ingredients in a blender. Pour mixture into a loaf tin lined with caramelized sugar (see below). Cover with aluminum foil. Place tin in a larger baking pan half-filled with water. Place pan in pre-heated oven (375 F) and bake flan for about 1 hour or until it is firm.

 

Caramel Sauce

 

Ingredients:

 

1 cup sugar

1 cup water


Directions (to make caramel sauce):

Put sugar and water in a saucepan. Caramelize in high heat. Line loaf tin with caramelized sugar. Be sure to line the sides of the pan.

I’ve been wanting some lumpia for a while and have pondered making my own, but finding the wrappers here have been difficult. I don’t want eggroll wrappers because that stuff is mega thick and lumpia wrappers are delicate.

I went on the hunt and found something I can work with and thought I’d share it with you. It’s trial and error and don’t expect to get it right the first time.

Lumpia wrapper

Ingredients:

1 cup flour
1 egg
1 cup water

Directions:

1 Mix all ingredients until very smooth.
2 Lightly grease a non-stick pan and heat. Brush mixture onto pan. When dough starts to come away from the pan, lift wrapper out carefully. It will not lift out if mixture is not done.
